Stars & Stripes Pie for the Fourth of July!!
Yummy to eat and very easy to bake recipes are always delightful. Here are some lip-smacking Fourth of July special pies, which are sure to make you drool. You can treat all your friends over this yummy pie this July!!

Serves 10

Active: 20 min
Total: 1 hr 20 min
Planning Tip: The cookies can be baked up to 2 weeks ahead and frozen airtight with wax paper between layers. Proceed with Step 6 up to 1 day ahead. Store tightly covered in a single layer (frosting stays soft) at cool room temperature or refrigerate.

INGREDIENTS:
1 box (15 oz) refrigerated ready-to-use pie crusts
3 cans (21 oz each) cherry pie filling
1 can (21 oz) blueberry pie filling
1 large egg, slightly beaten in a cup
3 Tbsp sanding or coarse (crystal) sugar
You also need: 1½- to 2-in. star-shaped cookie cutter

PREPARATION:
1. On lightly floured surface with lightly floured rolling pin, roll 1 pastry round into a 12-in. circle. Fit into a 9-in. pie plate, letting edges overhang. Drain 1 can cherry pie filling, combine in a bowl with remaining 2 cans cherry pie filling.

2. Bend a clean 6-in. square of cardboard in middle forming a wedge. Place in upper left corner of pie (like hands of a clock pointing to 9 and 12). Fill with blueberry pie filling. Spoon cherry pie filling into rest of pie. Lift out cardboard.

3. Roll other pastry round into a 10-in. circle. With a pastry wheel or sharp knife, cut round in five ½-in.- wide strips. With cookie cutter, cut 5 or 6 stars from rest of pastry. Brush strips and stars with beaten egg; sprinkle with sanding sugar.

4. Heat oven to 425°F. Starting in middle of pie, carefully place 3 long strips, evenly spaced, across filling toward bottom edge. Cut remaining 2 strips into 4-in.-long pieces. Lay over cherry filling on upper right corner. Press ends of strips into edge of crust. Roll overhang of bottom crust up over ends of strips to form an even rim. Flute or crimp rim. Brush rim with beaten egg; sprinkle with sugar. Place stars on upper left corner of pie.

5. Bake 30 minutes. Reduce heat to 350°F; bake 25 to 30 minutes longer until pastry is golden brown and filling bubbles. Place on wire rack and cool completely.

Fourth of July Recipes and Menus

The Fourth of July is such an easy holiday to celebrate. The theme, colors, and even lots of traditional foods and recipes are built right in. July 4th red, white and blue accessories are everywhere! It's easy to make your backyard or picnic spot the most colorful in your town for entertaining.

One of my best Independence Day memories is swimming with my family at one of Minneapolis' many lakes, then going to my grandparents' house for a great meal and a perfect view of fireworks from their backyard. The "Traditional" menu with recipes on the next page is my family's Fourth of July meal. You'll also find a "Red, White and Blue" menu, plus recipes for a portable picnic and a totally make ahead meal so your party is special and easy on you.

When you invite family and friends to your bash, make sure you specify this is a casual, active party! Decorations can include a red, white and blue tablecloth and napkins, casual pottery, candles in the holiday colors (my favorite), and of course lots of flags.
If you are hosting this party at your home on July 4th, think about lighting after dark. Sitting on a patio or porch on a warm summer night, waiting for the fireworks to begin after eating fabulous party food, is one of the highlights of summer. Tiny white lights add a wonderful touch, as do candles, tiki torches, paper lanterns, and oil lamps. Make sure you have great outdoor games for the kids and adults. Badminton, croquet, horseshoes, lawn bowling, touch football and water games add to the fun. In case of inclement weather, set up a picnic on the floor of your living room! Kids of all ages will love this celebration.

Food for the Fourth must be delicious, easy to eat, and easy on the cook! Grilling is a must, of course. Great barbecue recipes are most important, since sizzling food wonderfully flavored by the coals is a summer tradition. Remember to enjoy yourself as you ooh and aah over the fireworks, well sated by your delicious meal. And have a wonderful and safe holiday!
For the greatest ease, and so you also have a wonderful time at your party, all of these recipes can be made ahead - except for the grilled meats. The potato and pasta salad recipes are actually best if made a day ahead, if you have the time. The Peanut Parfait Dessert and other chilled desserts are also best made ahead. Choose one or more recipes from the Red, White and Blue menu to add some patriotic flavor to any of the other menus too.

Feel free to substitute any deli foods for any of the recipes below - remember, the key is to enjoy your own party! Set a lovely table, bring out all the food, and fire up the grill. Usually at any party, one person loves to be the grillmaster, so that job can be crossed off your list! Food safety is always on my mind when I'm entertaining. Remember - keep hot foods hot and cold foods cold.

The general rule is to not leave foods out at room temperature for more than two hours. Steamy summer weather changes this advice! If it's very hot, foods should be out of the fridge for only one hour. This way everything tastes better, stays fresher, and you can relax knowing everyone will have a great time.

Make sure if you are taking any of these menus to a picnic spot that everything is well packed in a clean cooler, with lots of ice in double plastic bags. Place the food that is most perishable (the meat, in this case) on the bottom. Don't place any uncooked food on top of cooked dishes, and remember as you grill the meat to serve the finished steaks on a clean platter to avoid cross-contamination. Food safety is really a simple concept if you follow these rules. Remember to enjoy yourself as you ooh and aah over the fireworks, well sated by your delicious meal. And have a wonderful and safe Fourth!
